Resep Cara Membuat Cake Tape Keju Spesial yang Super Lezat

Bahan I - Cake Tape Keju :

350 gram tepung terigu serba guna atau protein sedang
2 sendok teh baking powder
50 gram susu bubuk full cream merk apapun
1/4 sendok teh garam

Bahan II - Cake Tape Keju :

340 gram mentega (bisa di mix dengan margarine dengan perbandingan 1 : 1)
2 sendok teh vanilla ekstrak atau 1/4 sendok teh vanilli essens atau vanili bubuk
250 gram tape singkong + 3 sendok makan susu kental manis
300 gram gula pasir
6 butir telur suhu ruang
2 butir kuning telur (optional)
100 gram keju cheddar parut (optional)

Cara membuat Cake Tape Keju Spesial :

Siapkan loyang bundt (lubang di tengah), olesi dengan margarine dan taburi dengan tepung terigu. Balikkan loyang dan ketukkan untuk membuang kelebihan tepung. Sisihkan.
Siapkan oven, set disuhu 170'C, gunakan api atas dan bawah jika menggunakan oven listrik. Gunakan api bawah saja jika menggunakan oven gas. Jika oven pendek maka letakkan rak pemanggang di bagian paling bawah, dan alasi rak dengan sehelai loyang tipis untuk memanggang kue kering. Tujuannya agar bagian dasar cake tidak mudah gosong dan membuat panas oven lebih stabil.
Siapkan mangkuk, masukkan tape singkong yang telah dibuang serat-seratnya, hancurkan dengan sendok hingga lumat. Tambahkan susu kental manis, aduk rata. Sisihkan.
Siapkan mangkuk, masukkan bahan I, aduk rata. Sisihkan.
Siapkan mangkuk mikser, masukkan mentega dan vanilla ekstrak, kocok dengan kecepatan sedang hingga kembang dan warnanya berubah pucat. Tambahkan tape singkong, mikser hingga mengembang dan tercampur baik.
Masukkan gula pasir, kocok dengan kecepatan sedang hingga tercampur baik.
Masukkan sebutir telur, mikser dengan kecepatan sedang hingga tercampur dengan baik dan adonan menjadi pekat (tidak ada cairan/basah), tambahkan telur berikutnya dan kocok dengan baik. Lakukan hingga semua telur dan kuning telur habis.
Jika adonan sudah tercampur baik dan pekat, tuangkan tepung terigu dengan cara diayak langsung diatas adonan. Masukkan tepung dan keju parut secara berselang-seling, bergantian dalam 3 tahapan.
Aduk perlahan dengan teknik aduk balik, hanya hingga adonan tercampur baik saja. Jangan berlebihan mengaduk, segera hentikan jika adonan sudah tecampur dengan baik. Over mixing ketika tepung telah dimasukkan akan membuat cake menjadi bantat.
Adonan yang terbentuk pekat dan kental. Tuangkan adonan ke loyang.
Ratakan permukaan adonan dengan spatula hingga smooth. Panggang selama 45 menit atau hingga permukaan cake tampak kecoklatan dan ketika lidi ditusukkan ke tengah cake maka tidak ada adonan yang menempel.
Keluarkan cake dari oven, diamkan selama 10 menit di loyang agar uap panasnya hilang. Balikkan cake di permukaan rak kawat. Diamkan hingga benar-benar dingin. Cake harus dalam kondisi dingin ketika dipotong agar tidak beremah. Siap disantap.

Note: mengocok telur dengan adonan mentega merupakan bagian yang paling krusial, untuk mencegah mentega pecah karena terlalu banyak cairan maka masukkan telur satu persatu dan pastikan telur dikocok dengan baik sebelum menambahkan telur berikutnya.
